PASTEL FONDANT DE ROSAS ROJAS

FASE 1: BIZCOCHO de Pera y Chocolate
Ingredientes:
- 200 gr. Chocolate negro para fundir.
- 400 gr. Harina.
- 300 gr. Azúcar.
- 226 gr. Mantequilla.
- 3 Huevos. 
- 240 ml. Leche.
- 15 gr. Levadura.
- 2 Peras (Pure de pera 450 gr.) y
- un chorrito de limón.
Preparación:
Fundir el chocolate en el microondas 15seg remover, otros 15 seg. remover y así hasta que este fundido, o al baño María.


Pelar las peras, cortar en trozos evitando el corazón y ponerlas en un cazo con agua hasta que hiervan. Hechar un chorrito de limón para que no se pongan marrones. Pinchar con un cuchillo, si estan blanditas estan hechas. Sacar y triturar haciendo un pure.
En un bol batir los huevos hasta que se duplique la mezca, añadir el azúcar y seguir removiendo, añadir la mantequilla. Una vez esta todo bien batido, añadir la harina y la leche en 2 o 3 veces. Añadir la levadura y el chocolate y remover bien. Por último añadir la pera. Precalentar el horno a 180ºC durante 45 minutos.
Una vez fríos y fuera del molde, cortar por la mitad.

 FASE 2: ALMÍBAR: En este caso el bizcocho de pera y chocolate es tan jugoso que no hace falta almíbar.

FASE 3: FROSTING QUE CUBRE EL BIZCOCHO
Ingredientes:
- 125 gr. de Azúcar glas.
- 50 gr. Mantequilla.
- 200 gr. de Queso para untar.
Preparación: 
Mezclar la mantequilla con el azúcar glass, una vez bien mezclado añadir el queso. Remover bien.
Nota: Hacer un círculo bordeando el bizcocho con una manga pastelera.

FASE 4:  RELLENO DE TRUFA

Ingredientes Trufa:
- 100 gr. Chocolate para fundir.
- 250 gr. Nata para Montar.

Preparación: Fundir el chocolate. Enfriar. Montar la nata. Mezclar el chocolate con la nata. Ya tenemos el relleno.
Nota: Poner la trufa dentro del círculo de frosting.


FASE 5: CUBRIR EL PASTEL CON EL FROSTING
Cubrir con el frosting todo el pastel. Retirar el exceso con una espatula. El frosting hace que se pegue el fondant al pastel.

FASE 6: FONDANT AMASARLO, AÑADIR EL COLORANTE ALIMENTARIO Y CUBRIR EL PASTEL.


El fondant es como plastelina, lo amasamos bien, salpicar la superficie de trabajo con azúcar glas.
Añadir el colorante alimentario que necesitemos y amasar muy bien, que el colorante quede completamente integrado. Con un amasador extender el fondant en forma de círculo para tapar el pastel. 
Doblar por la mitad o enroscar en el amasador y poner por encima del pastel. Ajustar los bordes y cortar el fondant sobrante.
 


Para que no se hunda un pastel en otro, cortamos unas pajitas en en centro que harán de soporte para los pasteles superiores.
















FASE 7: DECORACIONES CON FONDANT: Idea de los pompones de Mensaje en una galleta y Once wed

Con un corta pastas redondo hacer 2 círculos medianos y uno pequeño. Mojar con agua el centro y montar los círculos uno dentro del otro en una huevera. Presionar dos lados y luego los otros dos. Hacer un círculo grande de fondant rojo (yo marqué el círculo con un taper redondo), pintar con clara de huevo pasteurizada para eliminar el azúcar glas sobrante y darle brillo. Poner todos los pompones en el medio y presionar juntos. 
Amasar el fondant rojo con un amasador. Con un cuchillo hacer 2 tiras de fondant rojo. Poner alrededor de las bases de bizcocho. Ya está el pastel. ¡A disfrutar!

RED ROSES FONDANT CAKE
PHASE 1: PEAR AND CHOCOLATE CAKE
Ingredients:- 200 gr. Black chocolate to melt.- 400 gr. Flour.- 300 gr. Sugar.- 226 deg. Butter.- 3 eggs.- 240 ml. Milk.- 15 gr. Baking Powder.- 2 Pears (Pear Puree 450 gr.) And- A squeeze of lemon.
Preparation:Melt the chocolate in the microwave 15sec stirring, another 15 sec. removed and check if it melt. Peel the pears, cut into pieces to avoid the heart and put them in a saucepan with water to  boil. A squeeze of lemon's take to keep from turning brown. Pierced with a knife, if they are soft they are made. Remove and make a pure. In a bowl beat eggs until doubled the size, add sugar and continue stirring, add the butter. Once everything is well blended, add flour and milk in 2 or 3 times. Add baking powder and chocolate and stir well. Finally add the pear. Preheat oven to 180 ° C for 45 minutes.Once cooled and out of the mold, cut in half. 


PHASE 2: SYRUP
In this case the pear and chocolate cake is so moist that you do not need syrup.

PHASE 3: COVER THE CAKE WITH FROSTING

Ingredients:- 125 gr. Sugar icing.- 50 gr. Butter.- 200 gr. Cheese spreads. 
Preparation:Mix the butter with the icing sugar, mixing well after adding the cheese. Stir well. 
Note: Make a circle along the cake with a pastry bag.

STEP 4: TRUFFLE FILLING 

Truffle Ingredients:- 100 gr. Chocolate to melt.- 250 gr. Cream.
Preparation: Melt the chocolate. Cool. Whip the cream. Mix the chocolate with the cream. We have the filling.

STEP 5: FILL THE CAKE WITH FROSTING 

Put frosting all around the cake. Remove excess with a spatula. Frosting makes fondant sticking into the cake.


PHASE 6: FONDANT knead, then add the food coloring and cover the cake. 
The fondant is like modeling clay, knead it well, sprinkle work surface with icing sugar.Add the food coloring and knead we need very well, the dye is completely integrated. With a kneader extend the fondant into a circle to cover the cake.Fold in half and screwed into the kneader and place over pie. Trim the edges and cut the excess fondant.
To keep a cake to sink in another, cut a straw in a center that will support for higher cakes.



STEP 7: DECORATIONS with fondant: Pompons Idea from:

With a round pasta cutter make 2 medium circles and one small circle. Wetting with water and mounted the center circles within one another in an egg cup. Press both sides and then the other two.  

Make a large circle of red fondant (I marked a round circle with a tupper), painting with pasteurized egg white to remove the remaining icing sugar and add shine. Put all the pompoms in the middle and press together. Knead the fondant red with a kneader. With a knife make 2 strips of red fondant. Set around the bases of cake. It is the cake. Enjoy!

    Encantada de que te guste la receta.
    La idea parte del bizcocho de chocolate de Joy of Baking http://www.joyofbaking.com/ChocolateButterCake.html pero despues modifique la receta tanto que no se parecen mas que en los gramos de mantequilla.
    En su receta pone que son para 8-10 personas. En su receta ponen 2 moldes iguales de 23cm. Yo puse 2 moldes diferentes y separe las tartas por tanto las raciones eran más pequeñas (en altura)y más cómodas de comer. Yo diría que a mí me salieron unas 18 personas o un poco más. También depende de como de grandes sean las raciones. Espero que te haya solucionado la pregunta, si no me lo dices.
